AMARONE

A big, full-bodied wine that is excellent as a before or after dinner drink. This deeply colored wine of purples and reds is sweet and aromatic. Its delectable smoothness is due to a low acid content, delivering a rich earthy flavor.

Pairing: A meal of steak, game or roast goes well.

BAROLO

The "King of Kings" as the old houses of Italy's famed Piedmont region claim. This Barolo meets the calling with a brilliant garnet radiance. Generous and robust, this style has hints of violets and fresh herbs. Oak, acidity and tannins in perfect harmony, deliver a wine that will fare well from cellaring. Heavy body and intense field berries abound and a spicy finish.

Parings: Rich stews, grilled meat and wild game dishes

BERGAMAIS (Beaujolais)

This supple, fruity and delicate red wine is best consumed young. Cherries and plums fill the nose and the sweet cherry follows through the mouth where it lingers . This refreshing wine is best served slightly chilled. It suits desserts and is excellent as an aperitif.

Pairing: A companion to fruits, desserts or light appetizers.

Oak: None Body: Medium Aging: 1-3 months

BOURGERON ROUGE

A smooth and round wine, velvety with subtle notes of berry. Dry and medium in color, this clean and refreshing wine offers unique flavors of raspberry, cassis and a touch of bell pepper aroma. Low in tannin. Generous, and crisp on the palate ages well but can be enjoyed young.

Pairing: Serve with smoked meats, fowl and strong cheese.

Oak: Medium Body: Medium Aging: 3-6 months

CABERNET FRANC

It is only recently that Cabernet Franc has come into its own as a pure varietal wine. It is usually a less tannic and acidic wine with a lighter body and color. It is however, known to be more aromatic and herbaceous than most reds and is often blended with Cabernet Sauvignon or Merlot in smaller quantities where it helps to heighten the organoleptic qualities of the blend.

Pairing: Suitable with red meats, game, lamb and duck.

Oak: None Body: Medium Aging: 3-6 months

CABERNET MERLOT

Deep garnet hues, with a brilliant red sparkle. The intense nose of red fruits and herbaceous undertones rise from your glass. The wine is robust, fresh, well structured given its high ratio of Cabernet Sauvignon juice. With the addition of Merlot mellowing the wine, giving it that all too delightful appeal on the palate.

Pairing: Excellent with tomato based pastas, pizza, cheese and beef.

CABERNET SAUVIGNON

Rich berry bouquet with blackcurrant undertones. The black skins have lots of tannin and deep rich color which indicate a wine with aging potential. This wine has an incredible complexity of aroma and taste with hints of cherry, chocolate and licorice.

Parings: Beef, turkey, lamb and stews

CABERNET SAUVIGNON SHIRAZ

Bold wine ! The intense fruit flavors of cherry, raspberry and blackcurrant with a hint of licorice. Benefits from oak maturation and keeps for many years. Heavy body and classic spicy tones make this a wine for serious drinking.

Parings: Wild game, red meat dishes, rich heavy sauces

CABERNET SHIRAZ

Rich and full-bodied with solid tannins and acidity. This wine delivers its full bounty absorbed from the Chilean terrain. Its deep garnet robe is matched in intensity only by its full range of flavors. Black cherries aromas blend wonderfully with its fruit jam flavors to create a wonderful experience for the senses. Always a crowd pleaser.

CARMENERE

Once mistaken for a Merlot, this mysterious grape varietal has recently been identified as an old world pre-phyloxera clone. Chile's rising star has a distinct blackcurrant nose with fruit jam flavors. Its soft integrated tannins allow for early consumption, yet the wine ages gracefully due to its rich and complex nature. Exhibits aromas of coffee, mocha and green pepper.

Serve with grilled meats and vegetables

CHAT DORMANT

A soft and delightful medium-bodied wine, which is brilliant red in color. Excellent when just bottled, it is a pleasure to sip, warm and refined with balanced tannins and good acidity make this wine "light" on the palate. Reminiscent of the French Pommard wines.

Pairing: Veal in light sauce or hearty salads with cheese.

Oak: None Body: Medium Aging: 1-3 months

CHIANTI

Rich and full this traditional Italian wine is truly from the old school. The wine possesses that lively attack expected from Chianti but finishes with a deep berry flavored smoothness. A robust red wine, in the style of Italy's coveted Tuscany region, with deep ruby and violet reflections. This complex wine exhibits hints of spices and black cherry notes with just a hint of dark burnt chocolate and home made jam.

Parings: Pasta, antipasto, veal and pork dishes

FRANC SAUVIGNON

Dark, rich and full-bodied, only begin to describe this wonderful blend of Cabernet Sauvignon and Cabernet Franc. A bouquet of blackcurrant and black cherry with a spicy undertone. A very generous wine with solid tannins and rich mellow oak, this combination will send your taste buds into a state of euphoria.

Parings: Well spiced game, grilled red meats, and strong cheeses

LAMBRUSCO

Bright ruby red in color with violet reflections, this wine is complex, charming and subtle. The aromas of ripe berries, a hint of cherries and subtle herbaceous finish with good length and structure. This wine has mellow tannins with hints of red fruit on the palate and an attractive freshness. It is usually consumed young and often slightly chilled.

Pairing: Good for Italian foods, appetizers and thick sauce pastas.

MALBEC

This South American favorite, offers a deep garnet robe. The flavors are of intense, ripe, red fruits with a hint of cinnamon. The well-balanced oak only enhances the wine's characteristics.

MERLOT

Generous and smooth, this Chilean red wine is easy drinking with soft tannins and a hint of oak. The bouquet is of lush red berries with a herbaceous undertone. On the palate, it is smooth and warm. It can taste of ripe plums and chocolate and feels like velvet.

Serve with lightly seasoned white meats

MONTEPOLICIANO

This Italian classic has a deep ruby robe, with violet reflections. It is a complex bold wine with soft peppery tones and nuances of spice, wrapped up in a velvety texture. Well structured for aging. Smooth and delightful.

Pairing: Best to consume with Italian-style pastas and red meats.

OLD VINE CABERNET SAUVIGNON

Old world varietals in the new world, from extremely old vines. Full ripe berry and blackcurrant with a herbal character. This wine is full-bodied with solid tannins, yet it is surprisingly smooth with an extremely long finish.

Parings: Grilled meat, cured meat, strong cheeses (very old cheddar, aged parmigiano..)

OLD VINE MERLOT

Rich with soft, smooth tannins and blackcurrant undertones with an underlying pepper nose. The "Smoky" oak flavors add to the wines subtle softness. It's long, full, elegant finish will leave you wanting more.

Parings: Rich sauce pastas, grilled veal and pork

OLD VINE RED ZINFANDEL

Bright ruby red with slight purple reflections. This wine has cherry and blackberry aromas with a subtle note of strawberries. Spice and pepper flavors fill the palate to both tease and satisfy.

Pairing: goulash, pepper steak, BBQ spare ribs and spicy pastas.

PINOT NOIR

Well balanced with a solid acidity and intense ruby color. Rich cherry flavored with a vegetal hint. The palate is rich fruity and appealing along with some sweet plummy fruit. Quite rich in style, low tannin ideal.

SANGIOVESE

A rich dry wine. Well-balanced, strong and full-bodied with a deep ruby red color. This wine has rich flavors of cedar and blackcurrant. It has the deep flavor of intense fruit and mellow tannins with just a hint of vanilla from the oak. The finish is clean and pleasant and is best matched with spicy foods.

Pairing: Spicy red meats, fowl and vegetables.

Oak: Light Body: Full Aging: 6-9 months

SHIRAZ

Rich and spicy. The color is deep and dark with aromas of red berries and black fruit. Full-bodied with rich velvety tannins and distinct black fruits with a lingering smoky flavor.

Serve with rich beef dishes or wild game
